Love them or hate them, there's no escaping these pickles! Kakarakaya is a popular vegetable dish in Andhra Pradesh and Telangana. It's also known as Bitter Gourd. As its name suggests, it is bitter in taste. But when prepared well, it becomes a pickle that you can't stop eating. The bitterness of the kakarakaya is transformed into a sour, salty, and sweet blend after the pickle process. It can be eaten raw or cooked. The kakarakais' crunchiness is retained but mellowed by this pickling process.
